INGREDIENTS:
Bacon, Gouda & Pumpkin Souffle:
- 6 slices bacon, cooked & chopped
 - ½ yellow onion, chopped fine
 - 3 lg eggs, separated (3 yolks & 3 whites)
 - 1/4 cup shredded gouda (or other cheese of choice)
 - ¾ cup canned pumpkin, unsweetened kind
 - ½ cup heavy cream
 - ½ tsp dried rosemary
 - ½ teaspoon sea salt
 - ½ teaspoon black pepper
 - ¼ teaspoon ground nutmeg
 - ⅛ tsp ground sage
 - ⅛ tsp cream of tartar *optional
 - 9 inch pie pan
 
Pumpkin Roll
- 1 cup Almond Flour
 - 4 T Butter, melted (sub Ghee for Dairy Free)
 - 3 Eggs
 - ¼ cup Psyllium Husk Powder
 - 1/2 cup Pureed Pumpkin
 - 1 tsp. Pumpkin Pie Spice
 - ¼ cup Coconut Cream
 - ¼ cup Sour Cream (sub Kite Hill Yogurt for DF)
 - ¼ cup THM Gentle Sweet (or favorite powdered sweetener)
 - 1 tsp. Vanilla
 - 1 tsp. Baking Powder
 - 8 oz Cream Cheese (sub Kite Hill for Dairy Free)
 - 8 T Butter (sub Ghee for Dairy Free)
 - ¼ cup Sour Cream
 - ¼ cup THM Gentle Sweet (or favorite powdered sweetener)
 - ¼ tsp. Liquid Stevia (can use powdered)
 - 1 tsp. Vanilla Extract
